    the brand doesnt really matter if you know how to use and care for them. Knives from Solicut are my favorite. just remember to hone them before each use. it'll keep them sharp for quite a long time... and remember to use the right knife for the right ingredient.

    I can not agree more Shun is by far the best knife I have every used. So much so that I bought an entire set, I know I am new here but I do know about food. I love the Shun knives I did not go with the Bob Kramer set, but I have contacted him about having a knife made for me and there is a waiting list for sometime, but his hand made knives are truly amazing

    I know Zwilling Henckels Miyabi especially the first line 7000.. i use a ceramic knife from kyosera.. very very sharp, doesnt need anything for maintenance, but there are some limitations. because it is made from pressed zirconium powder it can brake, so no hard bones or frozen meat..

    I have a few benchmades in my kitchen, but i haven't heard a bad knife mentioned yet

    when i bought the ceramic knife i had 4 big cuts in the first 3 days..

    Lol at all the shun nutswingers. There are plenty of good brands out there. Depends on preference.
    A great knife is useless in the hands of someone who doesn't know how to use it.
