A few weeks ago I was on a trip in Italy. I had my best italian dining experience in Rome in the hotel's Rome Cavalieri 3 michelin starred restaurant La Pergola.
The chef Heinz Beck, even if he is german, has mastered the italian cooking, especially pasta, and always aim to cook healthy and light food.
I had some excellent spaghetti with scorpion fish, the famous dish fagotelli la pergola which is pasta filled with carbonara sauce ( a method he created to make the carbonara lighter and easier to digest) plus John Dory and perfect sous vide cooked Lamb. Then for dessert we had about a dozen of them.
Whats interesting with this restaurant is that they have a water menu with bottles from 9 to 120 euros for a Californian bottle of water. They also serve 3 kind of salts to try, regular sea salt, smoky salt and one from Hawaii.

If you ever go back to Italy do everything you can to eat at Osteria Francescana! The wife and I had the pleasure of dining their last October (took 6 months to get a reservation) and it was lifetime experience!
In fact Netflix has a series called Chef's Table right now and the chef is one of the series.
