Leon, pick up Three Philosophers. It's a dessert beer. It'll change your life.

British tradition: purchase a case of vintage port when your son is born. Crack it when he turns 21. You really are aiming at 20+ years of age on these. That's a half bottle so it actually could have been cracked a couple of years ago. It was still pretty dang good!

I highly recommend the Taylor Fladgate 10yr, 20yr, 30yr, 40yr (depending on budget). They're all fantastic. They accompany a nice round of Stilton perfectly, and with a couple of guests a bottle may not survive the evening.

Warning: Port is addictive, and pretty soon you'll be justifying to yourself the purchase of a 1977 Vintage bottle.

If you really like the white desert wines, then the Sauternes are superb. The Chateau D'Yquem being the holy-grail of dessert wines (with a price to match). But any of the Sauternes are pretty darned enjoyable to accompany fruit, ice-cream and the like.

If budget is limited, look at the Inniskillin ice-wine at Costco. Good value and very drinkable.
