New guy to sushi, quick question
I've recently grown to enjoy sushi, but one thing has me confused and I want to straighten it out before I order again. Im partial to plain old Maki, however I'm confused onto when nori is on the outside or rice is on the outside. I prefer the rice. Is their a way to order so that this is the case, or does it vary with the different types of fish? Well, I hope thats somewhat clear

So... You want just Maki? As in Raw fish + rice?

You can ask the sushi chef for "inside out" rolls. I don't know the Japanese term for it, but here in the US, everyone will understand what you mean.
As your experience with sushi and Japanese foods grows, don't be surprised if your tastes change from time to time. Most people start out with maki and nigiri sushi and slowly venture into sashimi.
If you go to an outstanding sushi restaurant, you really owe it to yourself to order "omakase", or chef's choice, for your meal. You can specify things you like and what you won't eat, and as a general rule the chef will put together a finer meal for you.

Of course, in Dallas, if you speak Japanese at most sushi restaurants, the chef will look at you cross-eyed. Very few of our Japanese restaurants are Japanese owned or run; most are owned by Chinese, Vietnamese or Koreans. The folks that have always been in the Japanese and Korean food biz tend to be pretty good. Another big segment in sushi in Dallas are American-owned foux foux sushi and fusion places.
Unfortunately, many have made the move from low profit, low cost Chinese or other restaurants over to Japanese with the hope of higher profits and these folks tend to cut corners. Consequently, in my opinion, four out of five restaurants in the Dallas metroplex that serve sushi are absolute crap. Now, I don't care about the ethnicity of the restauranteur or the chef- heck, I even make halfway decent sushi. However, I care alot about quality and authenticity, and in Dallas you really need to discriminate as to where you eat sushi, unless your palate won't recognize old fish or you think a california roll is worth $50 if it's served by an avant garde douchebag in a fancy suit.

Ahhh, Dallas sushi FTL eh?
Chicago has some great places thankfully.
Naniwa is gewd...
Even delivery sushi IN THE LOOP is killer, albeit $40 for lunch...
