    Default Geranium (Copenhagen) - it could be a contender

    This is definitely not one for the burger/steak crowd. Geranium is a restaurant that, to me, is still finding its way. The best dishes were easily three Michelin star and among the best of my trip - their focus was laser-tight. Others felt disjointed with avant-garde technique that seemed forced. It feels like they don't know exactly what they want to do.

    The meal was solid 2 Michelin star (but they only have one) but really has the potential to be a knock-out 3 star with more focus. I ordered the 7-course menu (there was a 12-course available) and added one extra dish - they also included an extra dish.

    The room is beautiful and perfect, particularly in the late spring when it stayed light til around 10pm. I didn't get any pictures but it sits on the King's park and you look out onto the park.

    I wasn't really taking notes so this review is a bit light...

    Snacks



    Apple & Geranium - a perfect amuse - its appearance encapsulated the entire room into one small sphere and it's sweet/tangy was a nice cleanser


    Greeland Prawns - Dill & Cucumber - stunning - the minimalism, while bordering on parody, really focused the flavor


    Bread


    Signiture dish: Smoke, embers & ashes, Jerusaleme artichokes, monkfish(?) - i forget the exact details of the dish but they put some embers on the table to augment the flavors in the dish. it tasted fine but i'd put it in the parlor trick category.


    Scallops & Beetroot - Smoked Fresh Cheese & Horseradish - the film on top was unnecessary but the scallop/beetroot/cheese/horseradish was pretty good


    New Potatoes - Pea Sprouts, Lovage, & Pickled Elderberries - a very nice dish with potatoes 3-4 different ways, lovely peas, with just enough acidity


    Aromatic Leafs - Monkfish, Pickled Cauliflower & Mussels - a confused dish that did nothing for me


    The King's Herbgarden - perfect - the herbs were in a very light pork broth - just perfect - it doesn't look like much but the herbs just sang so clearly


    Mushrooms - those cylinders of mushroom jelly ruined anything i could have enjoyed in this dish (this was the extra) - very strange texture


    Asparagus & Lamb - Fried Bread, Ramson, & Green Strawberries - sitting on top of that lamb are sweetbreads - way too rich for me; to think this dish would have come straight off of the herbgarden is one of the reasons this meal feels so disjointed - something so light and ephemeral followed by a Mike-Tyson-in-his-hey-day dish.


    Carrots - Elderflower Vinegar & White Chocolate


    Sorrel & Sweet Woodruff - Forrest Illusions - a nice dessert - it also makes me laugh that it looks like a snail is poking its head out.




    If more dishes resembled the herbgarden and prawns/dill, this restaurant would be in my top 5.

    Those prawns really do look outstanding, and methinks the North Europeans have mastered the marriage of seafood and dill.

    How were the peas in contrast to the Ubuntu offering?

    What is that first "snack?" Looks almost like marshmallow.

    The peas were good, but not at the level of Ubuntu's pea dish. Want to say the first snack was an apple marshmellow but I honestly don't remember.


    Unfortunately, Geranium closed last week so i got one of the last meals they served. It wasn't my favorite meal ever but I was really hoping to try it again soon.
