Amazing as usual Chuck, the peas look even better the second time around.

Did the chef's wife have that lavender custard/pollen crumble on the menu for your GF?

and just to give people a sense - the meals above cost $80-90/person (not including wine) - an absolute steal considering its quality.

All I can say is that I'm envious; we have no vegetables like that on the Least Coast. Quite like the sushi experience in Japan, I've been spoiled by these outstanding veggies.

it is with great pleasure that i announce Ubuntu has entered my top 5 for the US - sensational, flattering, and near-perfect meal last Friday - this is exciting - and this guy is on another level right now.

if you just go and eat off the menu, it will be very good. if he cooks for you, like this meal, it will be one of the meals in the country that night. there is no substitute for frequenting your favorite restaurants (and/or being a cult blogger...)

(caps are from their own garden) - just the pics for now:

    "summer hints at autums"
SHISO ice, TOMATO, fall THINNINGS, 'mutau' APPLE

    RADISH and RATTAIL
creme fraiche with nori, HONG VIT, black salt

    'moon and stars' melon
preserved rind, 'mexican sour' GHERKIN, whipped coconut

    a simple 'black zebra' TOMATO
BASILS, goat ricotta, LION'S RUN "saba"

CELTUCE with pine nut and soy milk
'kadota' FIG pulp, VERBENA, tiny TURNIPS

'gem' avocado and 'purple haze' CARROTS
crispy OCA, 'poha' BERRY, pickled 'eisley wax' CHILI

    'forono' BEETS and BEETBERRY
    red quinoa, charred STRAWBERRY, hazelnut

    young COURGETTES
    pickled 'delfino' CORIANDER, vadouvan

CAPSICUM and po delta black rice broth
    summer SUCCULENTS, our sevillano olive

    SUNFLOWER 'barley' and hearts
arbuckle grits, 'polka' CORN, green TOMATO jam
    /3498/3914473814_83ee4a15a5.jpg[/img]

    BASIL parfait, silverado strawberries
roasted gently, VERBANA meringue, lime granite

    cornbread pain perdu with BLACKBERRIES
frog hollow peaches, HONEY ice cream, kettle corn

this is as good as it gets...

Thats some interesting looking food! I totally thought this was about the operating system though. That seems to be happening to me a lot recently (being fooled by thread titles).

i think both stole the word from some african dialect meaning 'humanity towards one another' - besides, you can't eat an OS

It was bound to happen - such consistently creative dishes that actually taste good? A shoe in for Chuck Eats Top 5.

    Tell me about these:

Such bold singular focus on tomato can be euphoric or entirely vapid?

Recalling the beets from our lunch, these must have been good.

If the grits were true to my memory...
