Paris - the only 3 restaurants you need to know
1. Pierre Gagnaire - the chef's chef, always experimenting, he will take you to extreme heights (but sometimes low), a necessary for anyone that considers themselves a foodie. he also might cook fish better than anyone.
cost: 300euros pp for the tasting menu

2. L'Arpege - possibly the world's best vegetables. he grows his own, ships them in everyday, and cooks them perfectly. he is also quite adept at lobster, langoustine, and game meats.
cost: at least 300 euros pp, and it can quickly escalate to a lot more

3. Ledoyen - it doesn't get the press of others but it might be the most consistent solid option. slightly experimental but refined, the cuisine is heavenly.

This blog will attempt to review the best restaurants in the world. I live in San Francisco but I do try to make it out a few times a year. My preference runs to high-end restaurants with stellar ingredients - decor and service, while nice, are secondary elements to the food. I like chefs that have a unique culinary voice - a philosophy that grounds their restaurant in a time and/or place.
Reviews
Sadly, all meals are paid for by me (or friends once in awhile.) If I know the chef, I will disclose that in a review. If I don’t pay for a meal (hasn’t happened yet), I will disclose that too.
About Me
I quit the high-tech rat race in Aug 2006 - I saw no point to working as a cog in a machine that made its top executives multi-millionaires several times over every year. However, if I don’t come up with my own great idea soon, I may be forced to eat those words.
Food and cars seem to be my top 2 passions. My current car is a 700hp 2001 Porsche Turbo outfitted with an upgraded Moton Clubsport suspension. When it runs, much to the chagrin of my friends, neighbors, and anyone within hearing vicinity; it’s pretty quick!

Chuck, I am curious to find out what you think of Marche in Menlo Park. And when you get the time can you give us top 10 places purely based on good food in SF and Bay Area. I want to see if we can have an event around that and check out these places in the hood.

i'm telling you MTK - when you do Europe later this year, you *must* book L'Arpege when you're in Paris. tell them you're vegetarian and they will deliver the world.

raw-mean - i never made it to Marche (and i believe the chef just left?) despite a gf living exactly 2 blocks away.
i'll create a few more threads for different cities.
