My Perfect Meal for 2008

they are listed in no particular order. i ate a little more than i expected last year; predictably, my plans are scaled-back this year but I did approach 2008 with that same mentality so who knows where I'll go for 2009.

Le Meurice - Paris, France - Sardine with quinoa

Providence - Los Angeles, CA - House-cured Tasmanian Sea Trout, Mint, Caviar
Sushiso Masa - Tokyo, Japan - Lightly grilled swordfish
Sa Qua Na - Honfleur, France - Daurade poche au citron vert, feuilles de liveche & coriandre, un bouillon clair a la noix de coco et huile de Combava

McCrady's - Charleston, SC - Poached Scallop, Fresh Coriander Berries, Mango Vinegar
Ryugin - Tokyo, Japan - Red Snapper from Osaka area

Koju - Tokyo, Japan - Deep-fried abalone
Jean Georges - New York, NY - Foie Gras Brulee with Sour Cherry-Yuzu Marmalade
Ryugin - Tokyo, Japan - Char-grilled Natural Large Eel w/ Aroma of Japanese Peppers, monkfish liver

Koju - Tokyo, Japan - Kamasu around matsutake, lime, Japanese beef

Manresa, Los Gatos, CA - Wood pigeon baked in salt, asparagus “achillea millefolium”
(Yes, Tokyo is that amazing)

most of the dishes are from 8-15 course meals - you never leave empty.

Very interesting to see quinoa playing such a prominent role in fine continental cuisine, an interesting pairing. I've never been a huge swordfish fan (probably because I've never had a really fresh piece), but that bit from Sushiso Masa looks plain amazing.
