Canon, Sony and Panasonic all make very nice ones for under 1k. Go with one that uses Flash memory (built in or cards) and stay away from hard drive cameras. For a camera that will be mounted in/outside of the car you need one with good stabilization. Canons seem to do the worse with Sony the best. Sanyos are another consideration. I have a Sanyo HD1000 and it does very well (Craig can confirm that). It was replaced with the HD1010 and just recently the HD2000. Amazon has the HD1010 for $350 which is a great deal. Maybe get one of those and then 2 of the ContourHD bullet cams, that would be right around 1k. Any of these new HD cameras need a newer computer for editing so if you are getting a new Mac you should be fine. The MinoHD's quality seems to be kind of bad... (judging by review videos I have seen).
The Creative Vado HD has very good quality video for a pocket hd video camera.
