Nice, I'm sure someone could get even a ama supersport (600) to under 7min.
    Ama Superbike probally 6.45-6.50ish.

I wouldn't doubt that at all. would be even better if all of the traffic wasn't on track too

Is this really a Ring record or just a record for a motorcycle? My understanding has always been while bikes are fast and agile, sports, exotic, and race cars are usually faster.

thats a good question and I honestly do not know. I think its a just a new record for motorcycles around the ring. I share the same understand as you do. A car has much more surface area to contact the road surface. I would think a proper race car would easily defeat that time

It's just a bike record, I'm sure there is a car that has done it in well under 7mins...

Found a list of lap times here for cars: Nordschleife lap records - FastestLaps.com
Owns: Vauxhall (Opel) Astra VXR (OPC) Nurburgring - 260bhp - No mods.

Add about 15 seconds to that time because he skipped the long straight in his time.

Fastest Ring time ever recorded is 6:11 held by Stefan Bellof in a Porsche 956 during a qualifying trial in 1983.
