    Default meat - (eat lunch before viewing)

    just returned from japan, decided to stop by the butcher, and guess what? he was carving up my latest 8-week-aged rib-eye. the mold on the outside (since chopped off) was black and it smelled of a wet dog - tasty. good times ahead...

    $250 of rib-eye

    it's proof that it's been dry-aged. the mold itself, while edible in small quantities (i think), is very strong. but the mold grows on the outside of the meat as it dry-ages and the butcher chops most of it off before he gives it to me.

    So do you have to cut off the Mold before you cook it? Or how does that work?

    It is vital that we work to a few golden rules. Always work in a small team. Keep a very low profile. Only deal with people who come recommended. And it's like selling anything else: washing machines, hand made shoes, blowjobs. As long as you don't take the piss people will always come back for more.     there's minimal amounts - the meat is so rich, and gets moreso on the outside w/ the mold, that i usually just don't eat that part. i have and it tastes even better sometimes - i haven't died yet.
