Just being prime isn't enough, like everything the government has a hand in the requirements are easier to meet then they should be. Differences in Marbling, texture and ever color change the tenderness of a steak... and the flavor follows the same rules.

With that said, Allen Brothers in Chicago has the top 1% of prime beef in the country and they are also mail order... But they built there business in steak houses like Mortons, N9NE, Charlie Trotters, etc.

Dry age meat requires a qualified palette, the enzymes that break down the meat in dryaging creates a unique flavor - very mellow but intense, with a butter like texture.

I order from them often, they are a lot like the soup nazi, they have the best product but not so great customer service or website. If you order tell the person on the phone you are a VIP customer and need to be transferred to Chicago... once there you'll be treated like royality. Can you guess what my clients got for Christmas... hehehe...
