I have no recipes but I love smoked salmon with a nice mixed salad or in a sandwich.

Here's a simple one that even our kids like:

    - salmon fillets, no skin

    - coat salmon with mayonnaise (make it fresh for bonus points, but the recipe is no longer simple at that point), both sides

    - crush rock salt, pepper corns and whole coriander seeds in a zip lock, you want it pretty chunky

    - coat fillets with the mixture

    - toss on the grill, covered, mostly indirect heat (about 300 to 350), some mesquite won't hurt if you have it!

    - let grill for about 5 minutes / side flipping once

    - serve with a hearty Pinot Noir

Mango Salsa is sooooooo good on Salmon whether it's cooked on the grill or baked in the oven. Dice mango, tomato, green bell pepper, red onion, cilantro (this really makes it) and a hot pepper, stir all that up and put on your salmon after it's cooked.

For a side I like making grilled veggies in one of those tin foil pockets. Zucchini is great with it.

That sounds really good but the mayo is way too many calories

Just soak it in salt, lemon and oregano and grill it. Delicious.
