    Default Knives, what do you use?

    I'm in the market (read: my crappy knives are dull) for some new knives. Let me know what you recommend on a $500ish budget for a set of 6ish - whatever fills the knife block...

    Global knives Don't spend more!

    Edit: though you don't really need six. The 7-Inch Santoku Knife, a paring knife, and a carving knife are all I ever use.

    Check out the Shun Ken Onion series. I love mine and I have owned quite a few of the other brands.

    Henkle Pro-S. I have been using these for a few years now and have never looked back. Best knives for the $ IMO. I do 95% of the cooking at our house so I speak from experience.

    I don't know, I have the Pro-S, but have been thinking about ditching them and going to the Shun Ken Onion cutlery.

    Only go with Japanese steel, much better then German. Hattori makes some of the best.

    It is vital that we work to a few golden rules. Always work in a small team. Keep a very low profile. Only deal with people who come recommended. And it's like selling anything else: washing machines, hand made shoes, blowjobs. As long as you don't take the piss people will always come back for more. And that is not to say we don't have that special kind of magic that makes two kilos into three. But never be too greedy.
