    Lightbulb TXSTYLE: Fresh ~ Homemade GUACAMOLE

    *I want to do a quick preface by stating... I am not trying to spam CULINARY section* I was informed by a mod here who I have known for a minute this section existed. I just happen to have some Love for the Kitchen.
    I save my recipes/posts such as these on my pc and now sharring with you all. Hope ya'll don't mind.

    One of my absolute favorite fruits is the Avocado. YES... Fruits. Look it up.
    Growing up in California, we had at least 3 neighbors I can remember who had Avocado trees. Of course we had a lime, lemon and fig tree ourselves.
    I would love to grow my own here, but the tough TX clay (in my area) underneath the soil is just not ideal.
    At any rate... Here is my recipe that I use regularly that I have tweaked over the years and this is my final one:

    1 large Avocado
    slightly less than a qtr. cup chopped/minced purple or green onion (neither are as overpowering as yellow/white).
    1/2 tsp sea salt (more or less to taste)
    3 small limes juiced
    1 Minced Jalepeno
    1/4 cup chopped roman tomato
    1 tsp minced garlic @ 2 cloves
    a dash of olive oil
    tblspn of chopped cilantro

    Enjoy with your favorite crunchy corn chips! Or with one of my favorite and simple Mexican Dishes pictured here: Picadillo - not to be confused with Pico De Gallo.

    Super simple and it can vary depending upon taste!

    Key ingredients:

    Ground Beef
    diced potato
    onion
    seasoning: garlic, salt, pepper, chile.

    The rest you can get creative with. It should not be watery/juicy as it's essentially a taco filling. My wife is Latin and I have has the opportunity to go to Monterrey, MX and sample some great cooking.

    Nice recipe! Usually, I'm too lazy to prep all the ingredients for proper guac. I'll just take a ripe avocado and mash/mix it with pico de gallo (or some spicy salsa) and squeezed juice from limes. Close enough to traditional to make everyone at the dinner table happy.....

    I made this last night TX. It was good!. I used it with the quesadillas I made.

    Noice! My wife is making chicken enchiladas with verde sauce, mexican rice and refritos for dinner tonight!
    Needless to say her cooking combined with the blistering heat outdoors has caused me to accumulate a few poundages.

    Do you like casseroles?. I'll have to make my chicken and cheese casserole and post up some pics of it with my recipe.
