    Default Heirloom tomato salad ala Ben

    I do it with WHITE balsamic vinegar, and italian style buffalo mozzarella.

    Tomato selection is crucial, it must be a superb heirloom, these were grown less than a mile from my house by a friend.

    Finish it off with Himalayan Rock Salt and fresh ground black pepper.

    nothing better going on in CA right now. if you want a slight variation, look for burrata cheese - it's mozzerella mixed w/ cream - mmmm.... most fancy food markets in our area should carry some.

    Believe it or not......I have never eaten an heirloom tomater. I need to pick some up this week and give it a shot.

    The difference between a really good tomato and a really bad one is astounding. The heirloom tomato salad Chuck and I had at Momofuku Ssam was decent, but something creamier than the tofu cubes would have taken it up a notch.

    The particular piece of buffalo mozzarella I lucked into (look at the consistency in the photo, it practically has the texture of half whipped cream.) was absolutely phenomenal. Chuck, thanks I'll have to source some burrata and try that too!

    Made it again tonight with some friends, the WHITE balsamic is a win with these pure fresh ingredients! One of the girls is lactose intolerant, she ate it anyway! (and was fine.)

    OH, I forgot to mention, I cannot stand the taste of vinegar or raw tomatoes. However together, one of my favorite dishes. Something happens to the two flavors, something magic; borderline sensual even.
