Anyone eat bison steaks?
A few of our finer markets and specialty meat markets are carrying bison steak. I've had bison burger in the past, but never the steak. It seems kind of lean. Any good?

Way too lean IMHO. They MUST be eaten rare or black and blue, or else you might as well chew your own Timberlands.

I had it when I was in South Dakota..............agreed that you need to eat it rare, thats how I like my meat anyways so it wasn't a big deal. it tastes a lot like elk IMO if you've ever had that. To me anyawys, its a lot richer tasting than regular beef

I've eaten plenty of wild boar here in TX. I'll prolly pick up one bison ribeye when I pick up some other steaks and give it a try.

I really like it, made rare/seared bison steak for christmas dinner for the family last year, (they wanted something different) everyone raved.
