    4. Pour both jars of the sauces into the medium to large pot. (Make sure your stove top in just on warm or low at this point)

    5. Cut up the chicken breasts into smaller chunks or bite size pieces. Then put them into the pot.

    6. Stir every now and then, then let cool and ENJOY!

    Tequila Chili

    Ingredients

    1 pound ground beef

1 (15 ounce) can light red kidney beans, drained
    1 onion, chopped
    1 clove garlic, minced
1 (8 ounce) can tomato sauce
    1 1/2 fluid ounces tequila
    1 tablespoon chili powder
    1 1/2 teaspoons ground cumin
    1 teaspoon salt
    1/2 teaspoon cayenne pepper

    Directions

Brown the ground beef in a large pot over medium heat, breaking it up with a spoon while it cooks; drain. Stir in the tomatoes, kidney beans, onion, garlic, tomato sauce, tequila, chili powder, cumin, salt, and cayenne pepper; simmer 20 minutes.

Since Summer is upon us, thought I would share an excellent salsa recipe that I have had about 7 years now.

Four cans (14 ounce) of Hunt's Fire Roasted Tomatoes OR two large cans (25 ounce (?) of Hunts Whole Organic Tomatoes. This can be changed to suit your taste, such as some cans have added garlic or cilantro, etc, but I always use whole organic or fire roasted, as those taste the best IMO.

Two medium onions, cut ends off and peel, cut into quarters.

2-6 Fresh Jalapeno peppers, ends cut off, leave seeds in

2 cloves of fresh garlic - shred/grate using a small cheese grater so it turns into mush

    1/3 cup of EVOO

    1/3 cup white vinegar

1/8 cup sugar and 1/8 cup of sea salt

Put all ingredients into a food processor or blender (blender makes creamy, food processor is more chunky style) and blend.

Put everything in a large pot over the stove and cook it on medium heat for 10-15 mins to blend all ingredients together. Do not let it boil.

This will make five regular size mason jars, which I think are 16 ounces each. Bottle it while its warm and let it sit out to cool. Can stay in pantry, refrigerate after opening, but it wont last long. Great for parties, xmas gifts or just a snack.

Note: six jalapenos is decently hot but not scorching. also depends on your taste for hot foods. You can always add more, cant take them out...
