CHEESE IT!
Purpose of this thread. Name a cheese that you really like, and use it in an application.
I like to cut Goat cheese in strips and lay them on a burger so that it looks like bacon. Add lettuce and dijon mustard to keep it simple.

I like bleu cheese, and I like to eat it with pretty much anything. Cheap bleu cheese makes me sick however.

^Likewise, put some Point Reyes Blue on anything and I would most likely eat it....I'm also a sucker for good smoked cheddar and smoked mozzarella. Either of those on a nice burger...mmmmmhmmmmm

Smoked mozzarella on a mushroom and jalapeņo burger is almost blissful. Think I'll grill that up tonight.

Asadero cheese in a Queso blanco dip. Add to this some home made tortilla chips and you are set! Optional for this is to add some chorizo sausage. If it wasn't 9:30am and I have the day ahead of me I would make some!!!

I love crumbled feta on a grilled steak salad with dried cranberries and pecans.

grilled haloumi cheese, done simply with a bit of lemon juice

Fresh mozz with prosciutto and a bit of oil on a sandwich roll.
Queso fresco crumbled on tacos.
Smoked gouda with summer sausage, beef, pork, or venison.

Love the king of cheese while drinking some cabernet sauvignon.. Cant go wrong with Parmesan, ever!
