homemade Margarita Pizza Napoletana thread...
well, i love pizza. how can you not love pizza. and as with any good pizza, it's all about simple, fresh, high quality ingredients, not a bunch of toppings stacked high. any pizza can taste good with a sh*t load of topping, but only a true margarita taste good when using the best stuff on earth...
here's my pizza from last night...

dough
dough is the foundation of the whole pizza...
use a layer of parchment paper to help with the rolling process (for sticking) and spinkle some flour on it, and make sure your hands are covered in a dust of flour to avoid sprinkling.

once flat and thin....
add whole san marzano tomatoes, cut in half, to the pie. i like my pizza saucy, so i add extra. but, just make sure to cover adequately. these tomatoes should be WHOLE but from a can as you need the sauciness. Always buy San Marzano.
i add a little sugar, salt, and a secret ingredient that i could share, but i won't.
then add BUFFALO mozzarella simply chunked on the top of the sauce. do this step rough, just plop it on.Last edited by JPanamera; 01-16-2009 at 03:21 PM.

pop in oven at 400 degrees, and monitor closely.
i like my pizza well done.
some people have fancy pizza stones, clay tiles, etc to cook on. they're cool, but all you need is a baking sheet.Last edited by JPanamera; 01-16-2009 at 03:21 PM.

OK, when the pizza appears done, it's all about FRESH BASIL.
I grow this at home in my garden.
People are all hip on organic- home grown stuff these days, but the bottom line is Italian Americans have been doing this since back in the day. They had fig trees in the middle of New York City apartment backyards, rabbits, basil, you name it.
We always did "homegrown" before you California hippies starting making it "trendy"
PS: if you don't have a small herb garden, you can get fresh basil at any grocery store.

voila, now take the whole sprig of basil and just CUT the leaves and let them fall all over your pizza.
