    Default A Good Queso Recipe?

I miss my queso from Hula Hut in Austin. Does anyone have a good, proven recipe for Queso (Chile Con queso)? I know there are tons on Google, but looking for one that someone has tried!

    Thanks!

Here's a great one from some dear friends in Austin. Its simple and really good. One
regular size block of Velvetta Cheese and 3 Cans of Wolf Brand Chili. Gently mix
together, heat and enjoy. I'm serious. You will love it!

    >I pkg Jimmy Dean Hot Sausage
    >
    > large yellow onion sliced
    >
    >Diced jalepenos (optionaladd if you want it real hot but do not use a lot)
    >
    >1 can Hot Diced Rotel
    >
    >1 can Plain Diced Rotel
    >
    >1 pkg McKormick Hot Taco Seasoning
    >
    >2-3 oz monterey jack cheese
    >
    >2-3 oz extra sharp cheddar cheese
    >
    >2-3 oz Philadelphia cream cheese
    >
    >1 large box velveeta
    >

    >This makes a crockpot full of queso enough for a party
    >

    >
    >You cut the velveeta, monterrrey jack, cheddar, and cream cheese into cubes
    >and add the diced onion and jalapenos in a large microwavable bowl.
    >
    >Add 1 can of hot rotel
    >
    >Put in the microwave and cook in two minute increments taking it out and
    >stirring every two minutes and cook it until it is all melted
    >
    >Then brown your sausage in a frying pan and once fully cooked add about a
    >cup or 2 of water and let it soak in the water and simmer as it burns off
    >---this makes the sausage tender and keeps it from over powering the taste

    >
    >You should not have to drain the sausage
    >
    >Put the sausage in the queso and mix and check consistency
    >
    >Now open your other can of plain rotel and if you like a lot of the tomato
    >then pour it all in but I dont like all that in there so I use the lid to
    >hold the tomato back while I add the juice to the queso until i like the
    >consistency of it. Then I add some of the tomato from the rotel but not
    >all---just do as much or as little as you like

Secure's sound yummy..going to have to try it!!! The easiest one that we enjoy is to melt a package of Velveeta in a crockpot with a jar of extra hot Pace salsa or picante then season to taste with Cayanne or Tony's...
