    Default mac 'n' cheese

    Four cheese that is....
    I cant believe I dont visit this section more often. I love to cook and usually find myself toiling away in the kitchen a few times a week. I usually spend the greater part of Sunday preparing for the feast, however with a party and dog shopping I had no time.....What does a man do, make a freakin hearty mac and cheese...

    Take 1 box of your pasta of choice, my preference elbow, bring to a boil, cook till finished, remove and cool.
    Take 1/2 lb of pancetta in a sauce pan, cook, approx six minutes until brown and slightly crispy. Leave pancetta and grease in sauce pan and add 1 and 1/2 cup of heavy cream, 1 3/4 cup of the following...grated parmesan, monterey jack, cheddar and provolone and 1/2 cup of peas. Whisk all together and salt and pepper to taste. Add pasta carefully and combine everything.

    Remove pasta and sauce from sauce pan and put in baking dish. Place baking dish in oven for approx 30 minutes at 350 and voila....Mac and cheese with a twist. This dish is perfect for winter and is the perfect comfort food.

    Throw some white wine or beer into that pan to deglaze before you add the cream...it will be even more delicious!

    I've been on a mac n cheese kick lately as well.What I like to do:use some more mixture of sharp and soft cheeses....try a goat mixed in with the parm and a real sharp vermont cheddar......add some cooked lobster meat,top with panko bread crumbs,and drizzle truffle oil on top...then bake!!! It might cost like 100 bucks to make six servings....but sexy!

    mmm that mac n cheese looks good. i have all the ingredients...might have to give this one a whirl this weekend.

    Never had peas in there. I do like adding some parm crusted chicken in mine...

    You guys are making me drive to the store in the snow and get these ingredients, definitely adding the chicken that sounds delicious.
