COFFEE: cold-brewing
Let me start by saying I am not a coffee drinker, but I think the concept behind this idea is interesting and according to popular opinion it really seems to reduce the acidity and bitterness of hot-brewed coffee leaving a smoother, more mellow flavor.
Essentially the process results in coffee concentrate you can then use for regular hot or iced coffee. Check it:

My college roomate's Dad invented the Toddy Coffee maker (the last link posted) for his wife when they were dating, because she didn't like the acidity. I think they still own the company. I'm no coffee drinker, but it does make better tasting coffee IMO.

Hahaha you seem to have a hand in or know someone that has a hand in everything, talk about six degrees...
I am inclined to try coffee again knowing that this procedure removes much of the bitterness and acidity. Maybe I would actually like it?

I have never had the chance to try the cold brewing method. It does take a little longer to brew. I am a starbucks brat and am hooked on that. I will defend starbucks as i worked for them at one time but also you have to give different coffees a chance. IT is just like anything else, there are different tastes and aspects to coffee
