    Thumbs up **Thanksgiving = Grub!**

    I need some new dishes to bring to the table this year!..
    Anybody want to share their recipes? post em up!

    List what they are. ie. Entree, Side, Appetizer, Dessert etc.

    try the "wants for dinner" thread. There look to be some dudes on there who can cook pretty well. I for one am in college so when I make stir fry it is quite an accomplishment.

    super-hearty stuffing

    - onion
    - celery
    - carrots
    - shallots
    - italian sausage
    - button mushrooms
    - olive oil
    - butter
    - dried stuffing/bread crumbs
    - chicken broth

    1. Chop mirepoix + shallots
    2. Sautee in olive oil/unsalted butter combo
    3. Add italian sausage & sliced button mushrooms
    4. Sautee sautee some more
    5. Salt & pepper
    6. Add stuffing mix
    7. Slowly add chicken broth while stirring until it just comes together
    8. Transfer to baking dish & bake covered @ 350(ish)
    9. Bake uncovered for 15 min

    *the baking time doesnt matter much because everything is cooked through; i usually finish my stuffing early and so end up leaving it warming in the oven with whatever else happens to be in there at the time

    mashed potato croquettes

    - boiled new potatoes (quartered)

    1. Mash the potatoes with the following
    (everything to taste)
    - parmesan cheese
    - unsalted butter
    - mayonnaise
    - sour cream
    - milk or heavy cream (more heavy cream, less milk)

    2. Chill in the fridge for at least an hour (until it sets and is cold enough to mold without getting all over your hands)
    3. With an ice cream scooper, scoop equally sized potato mounds
    4. Working quickly, roll into round, flat-ish discs

    - flour
    - eggs (beaten)
    - panko bread crumbs

    5. DEEP FRY until golden brown!
    because, really, that's what thanksgiving is all about

    * you can also put a bit of mozzarella in the middle of all that mashed potato goodness
    * really important to use panko bread crumbs, not italian seasoned or plain bread crumbs; panko = crunch

    Those mashed potatoes sound ridiculously good!

    One of my favorite dishes for this time of year is pan frying sweet potatoes and then put them into a crock pot of butter and brown sugar.

    -~6 good sized sweet potatoes
    -~2 sticks of butter
    - 1.5 cups of brown sugar

    1. Peel sweet potatoes
    2. Cut into slices. I normally cut them into about 1/4 inch slices.
    3. Pan fry them with some butter until each side has been seared. Generally on a med-high heat setting.
    4. Mix about a cup and a half of brown sugar and 6-8 tbsp of butter into a crock pot. Put on a med setting.
    5. as you get sweet potatoe slices seared mix them into the crock pot to let them finish cooking. I like to leave them in there for at least an hour before serving. You can put the crock pot on a high setting to get them done faster. Stir as needed.

    This is a simple yet pleasing dish. I always get compliments on it.

    Everyone in my family (including in-laws) is in agreement that we're foregoing turkey this year. I'll be cooking prime rib and steamed cracked crab instead.
