    I was just looking on the Boos website for a block to replace the crappy one I have, and one of my coworkers suggested that I should be looking at somehthing made from bamboo instead of maple.

    The reasoning seems to be that bamboo is harder and absorbs less moisture, making it a safer and more durable cutting surface.

    Now I've come to really respect Secure after reading his culinary threads, so I was just wondering what other people's opinions are on bamboo v.s. maple?

    Butcher block is nice. We have a 4' x 8' solid piece of unfinished maple butcher block 1 3/4" thick that we're going to build a dining table with for my mom. Should be pretty sweet.

    Secure: Thanks for the tip. On my lunch break I hit up the local restaurant supply store and picked up a 'small' Boos block!


    I can't wait to break it in, my old one was just too small and weak for my needs.

    Nice. Keep it well oiled after every use for the first month or so then go back to every week. I still love mine!

    We have a similar board. Juices have a place to go when slicing out a 5 rib roast!!!

    I have a questions about chopping blocks and chopping tables. I am considering buying one, but how do you clean it if it is too big to fit into the sink?

    Wood cutting boards are easy to deal with actually. One thing I don't do on mine is cut any raw meats. I usually scrape it real good once a day to get moisture out.
