no - that's pretty hard. alton brown has an article out on the internet somewhere but it takes daily maintenance.
the butcher is doing it, put in the order the other day, he adds 4 weeks on top of his normal 4-week dry-aged stuff.
there's nothing better than a great relationship w/ your butcher. (unless you have a great relationship w/ a fishmonger - which i do not.)

I wouldn't know where to begin. WholeFoods had 21 day today so that is what I opted for.
Definitely take pics when you get the 8 wk goodies. I want to see that!
