    Default Let's talk fajitas

    So made my same old fajita recipe last night and was disappointed. I salt/pepper the fajitas and marinate in a beer, ranch and salsa. Post up your recipes. I am read to try something new!

    How about chicken recipes?

    I am a total fajita 'ho.

    My first fajitas ever were in Houston, in 1982. My college roomate brought me home for fall break, and took me to try this new dish that basically was not being served anywhere else at the time. I think we were at Pappasito's (sp?). I remember the meal like it was yesterday. They piled out table high with sliced meats, fixin's, and hot flour tortillas. The clouds parted, the angels sang . . .

    Tonight's creation which I highly recommend


    meat marinade (chicken or beef would work, we used beef)

    -small can of apricot halves, juice and all
    -small can of pineapple chunks, juice and all
    -slice several jalapenos sliced thin seeds and all
    -hand full of garlic slicked thin
    -beer you enjoy

    1. sauté jalopenos after a minute or so add garlic saute garlic but do not brown.
    2. add apricot halves and pineapple chunks saute for a minute or two
    3. add juice from canned apricots and pineapples as well as one beer of your choice
    4. reduce to about half of original volume
    5. pour off about 3/4 of juice and some of the fruit/peppers into blender
    6. blend till smooth, chill marinate meat for 2-3 hours i've gone over night, it came out well.
    7. take remaining 1/4 of juice and majority of chunks and lightly blend so to cut chunks of fruit down creating a salsa of sorts.

    grill meat, serve with favorite acompanyments enjoy

    i suggest a red cabbage asian slaw and the salsa create with left over goodies

    red cabbage asian slaw
    -red cabbage chopped
    -rice wine vinegar (few table spoons)
    -salt peper sugar to taste

    Pappasitos FTGDMFW!!!! My favorite restaurant ever. I've at there at least twice a month for the last 20 years!
