Just picked up this set at Sur La Table.
Holly crap are these bad boys sharp!

Nice, we use Aritsugu and Masamoto knives in my house; my dad got them on his last trip to Japan.

They are the sharpest knives I have ever used. The white steel knives are slightly sharper (softer, easier to get finer edge) than the blue steel knives (harder, retain edge better than white steel).
