very gamey if not properly marinated.
Just like with all game meat, it becomes very tough if overcooked, as it is a very lean meat.
I like it quite a bit...

A good portion of the red meat I eat is either bison or venison. Bison ribeyes rock as does a nice venison roast. Key is to not overcook. Venison/elk and moose tenderloin are among my absolute favorite meats.

If you have Kangaroo in Australia I would assume it would be a lot more fresh than it would be over there in the states. I've eaten it before...it isn't bad but if it isn't cooked/marinated right I can see how it would be rather average.

I've had once roo burger before, it wasn't half bad I guess. However, I think I'll stick to normal beef.
If you live in Oz you have to try it at least once!

My dad tricked me into eating dolphin when we were in tampa a few years back. I was kinda like tougher sword fish.
