This is from years back around Thanksgiving . . .

When you get the small ones like this they smell like cucumbers and their bones have not developed so you dredge them in seasoned flour and fry them . . . yum.

The older ones you do the same but you have to filet and gut them first . . .

It's a classic NorCal dish, for the fish people . . . fried smelt . . .

They also use the smelt eggs for sushi
