I had this idea just after thanksgiving. It turned out quite well.

I'll assume you know how to roll sushi and make the rice and all. If not, I can provide some youtube links.

Ok, you'll need a good portion of already cooked turkey white meat and just a little bit more than the same amount of cabbage. I also added a small amount of onions, but if you don't like them, screw 'em. You'll also need sushi nori sheets and sushi rice.

Get a skillett hot and put your choice of cooking oil in. Put the turkey in and season it if you'd like. Add the onions at this point if your using them. I just put some Morton's hot salt on mine. Once the turkey is browned, add the cabbage and let it wilt and cook down till it has that almost clear look that fried cabbage attains. Then, it's all a matter of putting the rice on the nori, adding a large portion of the turkey and cabbage, roll it, cut it, and enjoy. It's great with some shoyu and wasabi, also.
