Smoked Turkey... hicory and Apple wood chips to provide the flavor. Wife get's a 30 gallon trash bag and soaks the turkey in a brine (salt and herbs, garlic, etc.)
Smoking in a dedicated wet smoker. This is like fishing. You just lay back and have a six pack or more all day long tending to the charcoal, water level and woodchips. One year I completed my front suspension on the Cobra doing this!2005 Factory Five MkIII Roadster

Deep Frying is the best for me, takes only 30min and its daaaammn good.

Just caught this thread.
I replied to the signature dish post with my fried turkey. I do one for Thanksgiving and a few others during the year.

I have a smoker, but have yet to try one in there.four [fawr, fohr]

I did a Turducken last year, gotta brine each bird seperately! I don't have anywhere to keep a fryer, really, so I just do mine old-fashioned and throw it in the oven. Convection 4TW! Not cookin or eating turkey this year, but next year I want to experiment more with turducken.
