Smoked Turkey... hicory and Apple wood chips to provide the flavor. Wife get's a 30 gallon trash bag and soaks the turkey in a brine (salt and herbs, garlic, etc.)

Smoking in a dedicated wet smoker. This is like fishing. You just lay back and have a six pack or more all day long tending to the charcoal, water level and woodchips. One year I completed my front suspension on the Cobra doing this!

    Brian,

    Just caught this thread.

I replied to the signature dish post with my fried turkey. I do one for Thanksgiving and a few others during the year.

    Post your signature dish...

I have a smoker, but have yet to try one in there.

I did a Turducken last year, gotta brine each bird seperately! I don't have anywhere to keep a fryer, really, so I just do mine old-fashioned and throw it in the oven. Convection 4TW! Not cookin or eating turkey this year, but next year I want to experiment more with turducken.

Damn, your coming here. I am leaving and going to Santa Fe New Mexico for the whole week. I leave on 11-23 and get back on 11-29. I would have liked to have bought you a drink.
