    Default FAJITAS Anyone...

    Skirt Steak is one of my favs! If seasoned and grilled correctly, it rivals any cut of Beef!
    I start with a very clean 2-3lbs cut
    I season with fresh lime juice
    Hickory & Fajita rub

    It sits for @ 20min
    Then unto a very hot grill for 8min each side.
    Stay tuned for after shots....

    I always find skirt steak too salty, no matter how much I rinse or soak it.

    We roasted short ribs for several hours the other day so I know what you're saying about delicious meat. The rub can make a huge difference.

    On the salty comment... That is really strange? If I don't season it there is no hint of salt.

    That looks awesome! Maybe mine are salty because I purchase my meat from a Kosher butcher and Kosher meat is salted. Although for some reason skirt is always MUCH saltier.
